Some businesses have a five-year plan. Good Baklava started with three containers of baklava, a Phish parking lot in Mountain View, and a guy named Roy Donk who needed gas money.

That improvised bet on the lot -- layers of crisp phyllo, pistachio, and honey hitting different when the music is right -- turned into something nobody saw coming. Roy spent years selling to heads at shows across the country, earned a following that follows him the way Phish fans follow a summer tour, and eventually built an actual business: Good Baklava.

The baklava is fresh-baked, made from Turkish-frozen phyllo dough finished in the tristate area, and sold by a guy who will talk your ear off about it with the same energy as a 2001 Hood. These aren't tourist traps wrapped in plastic. These are the real thing.
